A week or so ago, we talked about cooking in your RV. Sure, there’s limited counter and storage space, but it’s still a snap to make pasta, pancakes, even hot dogs and kabobs, inside your RV. You can even zap TV dinners in the microwave if you’re short on time and energy at the end of a long day in the parks.
Access to a grill, however, will open up a whole new world to you, including many more options when it comes to figuring out what’s for dinner. Think about hamburgers, BBQ chicken, and of course, tin-foil meals like breakfast burritos and s’mores granola.
Since you don’t want to spend every night cooking in your small galley-style kitchen, it’s a must to get on board with a grill at your campsite. While many campsites have free-standing grills, your best bet is to pick up a cheap portable grill at the start of your trip and toss it on your last day. These are easier to use than campsite grills and can often be picked up at the grocery store on your first run for food and supplies.
When you’re ready to get cooking RV-style, here are a few easy-peasy meal ideas that you and your family will love.
BBQ Chicken & Corn on the Cob: This is one of the easiest meals to make at a campsite. Brush each piece of chicken with BBQ sauce, then throw on the grill. Add the corn on the cob to the grill (keep the husks on) and cook for 15-20 minutes. Serve the corn with BBQ butter. Yum.
Quesadillas: Sure, you can cook these on your RV stove, but you can also make these quickly on the grill. Simply spray one side of a tortilla with cooking spray. Place on the grill, then add your favorite fillings, like cheese, black beans, tomatoes and green peppers to the unsprayed side. Fold over, then cut into quarters.
Grilled Cheese Sandwiches: Spray each side of two pieces of bread and toast on the grill before adding a slice of cheese. Try adding tomato and ham to the sandwich to spice it up. Heat up tomato soup in a pot on the grill to go along with the sandwiches.
Grilled Kabobs: On your first grocery outing, pick up wooden or metal skewers for kabobs along with your favorite meat, like beef or chicken. Alternate your kabob meat(s) on the skewers with cuts of green or red pepper, mushrooms, cherry tomatoes and/or onions.
Hamburgers & Hot Dogs: No explanation necessary. If you can grill hot dogs and hamburgers at home, you can grill them in just the same way on the grill at your campsite. Serve with chips or a pre-made pasta salad. Maybe even baked potatoes, which you can cook up on a grill, too.
And, of course, don’t forget about dessert. A must after a great day spent exploring our National Parks by RV. S’mores, strawberry shortcake and campfire cones are all fun options.
